Through innovative and safe adaptations of their cakes, Landtmann's Feine Patisserie, has made it their mission to make swallowing easier for people with disorders. The barrier-free "Marvella cakes" are smooth and delicate pastry products. These pastries offer incomparable pleasure, and are also a significant social and emotional experience. In a conversation with Ms. Irmgard Querfeld, we wanted to learn more about these innovative desserts.
For over 45 years, the Querfeld family in Vienna has been making cakes and pastries for its nine coffeehouses and restaurants according to traditional recipes and with selected ingredients. "Landtmann's Feine Patisserie" is the heart of the Viennese family business, where desserts are created with love and attention to detail.
How are the Marvella cakes tailored to the needs of people with swallowing difficulties?
Querfeld: „"Marvella is the result of intensive research and collaboration with doctors*, speech therapists and those who are affected. We have made innovative adjustments to optimize the consistency of the cakes with the goal to facilitate swallowing, without neglecting the taste and the aesthetic experience. The cakes are barrier-free and offer the highest level of enjoyment, both in terms of taste and appearance. Equipped with a high fat and protein content, they provide people with dysphagia with necessary nutrients.“
