Swallowing difficulties, medically referred to as dysphagia, are quite common and affect about 10% of society. The Viennese cafetière family Querfeld, known for the Café Landtmann, focuses on innovative solutions and produces barrier-free pastry for people with swallowing disorders.
Vienna is known for its traditional coffeehouse culture, and these Viennese institutions are also good at keeping up with the times. Through innovative and safe adaptations of their cakes, Landtmann's Feine Patisserie, has made it their mission to make swallowing easier for people with disorders. The barrier-free "Marvella cakes" are smooth and delicate pastry products. These pastries offer incomparable pleasure, and are also a significant social and emotional experience. In a conversation with Ms. Irmgard Querfeld, we wanted to learn more about these innovative desserts.
For over 45 years, the Querfeld family in Vienna has been making cakes and pastries for its nine coffeehouses and restaurants according to traditional recipes and with selected ingredients. What inspired you to offer pastry for this target group?
Imrgard Querfeld: "The inspiration came from everyday life. Many people with swallowing disorders cannot enjoy conventional pastry. As a tradition-conscious Viennese pastry, it was important to us to make enjoyment possible for everyone, regardless of their health restrictions."
How are the Marvella cakes tailored to the needs of people with swallowing difficulties?
Querfeld: „"Marvella is the result of intensive research and collaboration with doctors*, speech therapists and those who are affected. We have made innovative adjustments to optimize the consistency of the cakes with the goal to facilitate swallowing, without neglecting the taste and the aesthetic experience. The cakes are barrier-free and offer the highest level of enjoyment, both in terms of taste and appearance. Equipped with a high fat and protein content, they provide people with dysphagia with necessary nutrients.“
How did the funding from the Vienna Business Agency help you launch the Marvella cakes?
Querfeld: "The funding was of great importance to us. It helped us launch a new product line while preserving jobs throughout Corona's challenging times. It also allowed us to reach out to new target groups and provide overall added value. We are truly thankful for this support. For us, as a Viennese family business with a long coffee house history, it's a pleasure to have been able to bridge the gap between tradition and innovation with these cakes, while also expanding our business through new approaches."
