A zero waste pop up restaurant is our idea. We design a social place that for the making of its main product - 18 h long cooked bone broth - sources the best ingredients from Vienna's finest restaurants - ingredients that would otherwise be mostly ‘wasted’ after their original and intended use. CALDO believes in using and consuming less. Respecting and utilizing everything, to promote food consumption that is truly sustainable and healthy. Food that connects with us as humans and as a society – and presenting it in a pop up restaurant that for 2 months serves as an open space of communication for its customers and producers – to foster a dialogue for change that is needed more than ever after the Covid -19 pandemic.
